If you haven’t noticed, I love a splurge. Cheeses, cured meat, carnitas burritos. Sister lives for food. But healthy can be delicious too. And as I’ve said before, one of my favorite proteins is salmon. I absolutely love the distinct flavor and the rich, fatty texture. Omega 3 fatty. The good stuff.

One of my best hot-weather dishes is brown sugar garlic salmon over a summer kale salad. Sounds dainty. Tastes divine. The rub for the salmon is sweet, spicy, and packed full of flavor. And the kale salad adds brightness and texture. Trust me, it’s good.

First, preheat your oven to 400. Then, start on your rub. I always use this rub for two 8 ounce filets, which will feed two hungry adults. Adjust accordingly. Combine 2 cloves chopped garlic, 2½ tablespoons brown sugar, 4 tablespoons chopped parsley, 2 teaspoons salt, 1 teaspoon pepper, 1 teaspoon paprika, and ¼ teaspoon red pepper flakes in a small bowl.

After your rub is ready for rubbin, prepare your salmon. Set out two 10-inch by 10-inch squares of aluminum foil onto a large baking sheet. Place the salmon filets in the center of the foil squares and drizzle each filet with olive oil. Then apply the rub. Press the rub gently into the salmon, and close the foil around the filets.

At this point, you should have two little salmon teepees ready to pop into the oven. Put your teepees into the oven for 14-16 minutes or until they reach the desired temperature.

Meanwhile, prepare the summer kale salad. Break up 6-8 cups of kale into bite-size pieces. Add ½ cup dried cherries, ½ cup chopped almonds, the juice from two lemons, and a drizzle of olive oil. Toss to coat the kale. Serve the salmon filets over the summer kale salad. Bada-bing-bada-boom. Dinner is served.

And if you want a little splurge with this meal, add a nice sauvignon blanc. Because wine goes with everything.

    This looks delicious. It reminds my of a dish I had while visiting friends in Killarney. May I suggest a glass of Guinness and some brown bread???
