A Very Sexy Burger

I love a good burger—especially in the summertime. And, my friends, I’ll let you in on a little secret. I’ve uncovered the key to a truly perfect (dare I say, sexy?) burger. Say it with me now… Roasted. Garlic. Aioli. This magical sauce will forever transform your burger eating experience. Prepare yourselves.

For my favorite burger recipe, click HERE. Add Boar’s Head American cheese and homemade sweet potato fries, and you’re really in for a treat. And now—without further ado—the heavenly aioli.

Burger Heaven

12-15 cloves garlic, unpeeled
¾ cup mayonnaise
¼ cup olive oil
juice from 1 lemon
salt to taste
black pepper to taste
red pepper flakes to taste

In a dry (no butter, no olive oil!) sauté pan, cook unpeeled garlic cloves over medium heat, rotating occasionally, for 7-8 minutes or until the skin is charred and the garlic cloves’ flesh is tender. Peel and coarsely chop the cloves. Combine garlic, mayonnaise, olive oil, and lemon juice in a food processor, and pulse until smooth. Stir in salt, black pepper, and red pepper flakes to taste. The aioli should be well seasoned. Slather a toasted burger bun with the aioli, and enjoy!
